Okay, jumping off the back of something Snug said in his post here about simulating the season in EA's game. I have Franchise Hockey Manager 6 (from the makers of Out Of This Park Baseball) and I'd trust it over EA.
They made a save where they have rosters updated right before the NHL season stopped (updated ratings, all injured players are correct, etc.). If we are interested we could do our playoffs via that game simulation.
It'll obviously be some extra leg work, but I think it is doable.
This is my vision: Each team will submit me their lineups for that day (Fantrax no longer shows the 2019-2020 schedule for our teams, so we'd have to figure out a work around as looking up the actual NHL schedule for each date and submitting a lineup would suck).
I'll simulate the day in FHM 6, pull the stats, and tally them with our scoring system. Rinse and repeat.
