So if I win a guy at $5 Million, I could give him 1 year for 5M, or 5 years a 1M?

If you win someone @ $5M you have the option of a 1, 2 or 3 year deal:
1 @ $5M
2 @ $2.5m
3 @ 1.7M

You can't sign him to a 4 or 5 year deal unless the total contract is $5.5+ per the contract limits rule:

Contract Limits
Except for any contract inherited in 2011, all contracts must be no longer than five years. Also, for a given salary, all contacts (extension, FA) have term limits (max years contract can be per the salary) as provided below.

<= $1.4m, 2 years
$1.5m - $5.4m, 3 years
$5.5m - $7.9m, 4 years
>=$8m, 5 years (the overall limit)

I had a question about the entry draft.  Is there a predetermined amount of draft picks that we will have to take in the draft?  Let's say I only have 6 available spots on my team and we have 10 rounds for the draft how would that work out?

The draft will be 10 rounds but if you only need/want 6 players you can pass after round 6.  Though you can also release players to  make room for draftees.  Decent prospects should be out there in the later rounds.
